Ingredients:

10 carrot tops, cut 1 inch from stalks

5 tbsp Extra Virgin Olive Oil

3 tbsp Water

2 lemons, Zest and Juice

1 Garlic clove

1 Ripe Avocado

Small handful of Parsley

2 Spring Onions

Salt and Pepper

4 generous handfuls Brown Rice Pasta

100g Samphire

Instructions:

  • In a blender add all of the top 9 ingredients, whizz until everything is well combined
  • Meanwhile bring a large pan of water to the boil, cook the Pasta as per packet instructions
  • Drain the Pasta, keeping a good 4tbsp cooking water in the pan, before stirring in 4tbsp of the sauce, stir gently before adding in your Samphire. Cook for 4 mins
  • Serve with some more Greens, a Salad, Broccoli, Roasted Cauliflower, Asparagus, any other Veg or just as is!
