We know – no one likes 2 recipes in one, but the first (a Granola) will last for weeks an the latter is Granola + 1 ingredient #Simmmples!

First up, el Granola. Now as we’ve said before the shop-bought stuff is pretty much always full of ‘free sugar’ (honey / coconut sugar / maple syrup / dried fruit etc.) so for the fully sugar free version here it is & fyi, these instructions are merely guidelines, feel free to use 150g Pecans and 100g Walnuts if you’re not partial to an Almond, or vice versa – mix & match all the wayyy;

Granola Ingredients:

150g Almonds

50g Pecans

50g Walnuts

80g Oats (gluten free if Coeliac or NCGS)

1tsp Cinnamon

1½ tbsp Coconut Oil (melted)

1 inch fresh Ginger

50g Sunflower Seeds

50g Pumpkin Seeds

80g Coconut Flakes

Instructions:

  • Preheat the oven to 180°C
  • Whizz half the Almonds, Pecans & Walnuts in a blender
  • In a bowl combine the chopped Nuts with the remaining whole Nuts, Oats, Cinnamon & Oil before grating in the Ginger
  • Add the mixture to a baking tray and bake for 20 mins
  • Remove, give it a shake, add the Seeds and Coconut Flakes, stir again and bake for another 10 minutes.
    • This recipe will make at least 10 brekkies fyi

Chocolate Granola Bars:

  • On a very low heat setting melt 100g of 90-100% Chocolate in a pan
  • Take it off the heat & stir in 100g Granola, being sure to coat every last bit
  • Pour the mixture into a lined baking tray and let it set in the fridge for at least an hour before cutting (breaking/smashing) into squares

Makes: 12 squares (depending on how generous you are 😉 )
