When you’re short of time but you want some hot / lightly roasted Veggies;

Ingredients:

½ Celeriac

1 Carrot

1 Red Pepper (any colour will do)

1tbsp Coconut Oil

5 Sprigs fresh Thyme

Pink Himalayan Salt & Pepper

Instructions:

  • Pop the oven on to 180oC
  • Grate your Celeriac, Carrot & finely slice your Pepper. Pop in a roasting tray with the Oil, Thyme and a dash of Salt and Pepper. Combine all ingredients and place in the oven
  • Roast for 15 minutes, take out, give it a good stir and pop back in for another 10 minutes
  • We love this served with Roasted Hake / Slow Roast Lamb or mixed in as part of a big Veggie bowl!

Serves: 4 as a side
