2 Beets (cooked)

2 Mackerel Fillets

½ Rips Avocado

Handful fresh Spinach

2tbsp Extra Virgin Olive Oil

Juice of 1 Lemon

Pink Himalayan Salt & Pepper

2tbsp Pine Nuts


  • Slice your Beets into cubes, the Avo into thin slices and flake the Mackerel into bite size pieces
  • In a large bowl combine with the Spinach, Oil, Lemon Juice, Salt, & Pepper
  • Then in a dry frying pan add the Pine Nuts and heat through until they begin browning on the outside
  • Sprinkle over your dish and serve with some Toasted Sourdough / a baked Sweet Potato
