1 Cabbage (red – more phytonutrients)

3 Garlic Cloves (optional)

1 inch Ginger

1tbsp Pink Himalayan Salt, heaped


  • Finely slice the Cabbage and Garlic Cloves and grate the Ginger
  • In a large bowl, add all the veggies and rub the Salt into them. Sure, this sounds a little odd, but just roll with this one. Rub for about 5 mins and you’ll notice how the natural juices start to ooze out of the Veggies
  • When there is substantial juice, pop your mixture into a sealed jar and leave it in a warm room for 2 days. Then put the jar in a cooler room or window shelf outside
  • Taste after a week and so on until it TASTES DELICIOUS

Serves: 1 Jar – will last for ages in the fridge…
