Broc / Avo / Feta / Tomato / pArsley . . .

Ingredients:

1 Broccoli

2 Avocados

100g Feta

200g Cherry Tomatoes

4tbsp Extra Virgin Olive Oil

Juice of 2 Lemons

Handful Fresh Parsley

50g Sunflower Seeds

Instructions:

  • Slice up your Broccoli – the stalk and florets – in long thin slices
  • Bring a pan of water to the boil, add all of the sliced Broccoli and boil for 3 minutes, then drain and run under some cold water
  • Dry fry the Sunflower Seeds for 2 minutes and put to the side
  • Meanwhile half, stone and slice up your Avo (long thin slices), half the Tomatoes
  • In a large bowl, combine the Broccoli, Avocado, Tomatoes and cover with crumbled Feta
  • Chop the Parsley and mix with the Olive Oil & Lemon Juice, drizzling over the salad
