An all-in-one, super simple DinDins;



1 Broccoli

2 Bok Choi

300g Cherry tomatoes

4 Salmon Fillets

2tbsp melted Coconut Oil

Pink Himalayan Salt & Pepper

1 Lemon, to serve


  • Whack up the oven to 180°C
  • Chop the Broc, slice the Bok and halve the Toms
  • On a large baking tray spread out the veg and pop the Salmon in the middle, skin side up. Cover evenly with the Oil, a dash of Salt and lots of Pepper
  • Roast for 12/14 minutes and voilà! *Great served with Sweet Potato Wedges
