Dressing

2tbsp Tahini

5tbsp Extra Virgin Olive Oil

Juice of 1 Lemon

Pink Himalayan Salt & Pepper

Salad

1 Carrot

1 Courgette

1 Parsnip

4 Asparagus Spears

Instructions:

  • Make the dressing by adding all the ingredients into a bowl until thoroughly mixed
  • With a vegetable peeler, peel all the vegetables into the same bowl. Mix the vegetables and dressing together until they are all coated and serve

Serves: 4 – or 2 as a Main Course
