100g Chorizo, cubed

1 Sweet Potato

8 eggs

½ bag Spinach

Pink Himalayan Salt & Pepper


  • Whack the grill on to a high heat
  • Fry the Chorizo for 1 minute before adding the Sweet Potato and cook through on a low/medium heat for 10 minutes until tender
  • Meanwhile beat your Eggs together in a bowl and set aside
  • Add the Spinach to your frying pan until wilted
  • Add the Eggs, Salt and Pepper
  • Combine well over the heat before placing under the grill for 7 minutes (*a little less if you have a huge frying pan), and serve with salad, inspo can be found here
