Laterz Hellmanns & hello luscious homemade Mayonnaise. This is easy to make, full of healthy fats & it tastes delicious!


2 Eggs, separated

¼tsp Pick Himalayan Salt

2tsp Cider / White Wine Vinegar

1tsp Dijon Mustard

230ml Light Olive Oil


  • Place the two Yolks, Salt, Vinegar and Mustard into a bowl with a towel underneath (so it doesn’t go flying) and whisk to combine
  • Verrry slowly add the Oil whilst continuously whisking, this will ensure it doesn’t split
  • Keep whisking until all oil combined
  • Transfer into a bowl, serve with salad, mix into a coleslaw or keep in the fridge for up to a week
  • Use the Egg Whites in an Omelette or whip up this little number

Makes: 2 ramekins (c. 300g)
